I wondered if part of my problem with fresh ground flour is the recipes I'm using. Maybe I'd have better results if I found recipes that call for fresh flour.
So I found a focaccia recipe from Grits and Grains.
The dough came together quite nicely; I was very pleased. And then what always happens when I make bread happened. I had to leave the house right when it went into the oven. 🤦♀️
Thankfully, G was going to be home just in time to take it out of the oven.
So, I'm not sure how many of the issues are because of the bake vs. my baking skills, ha.
It was very salty. If I make it again I'd definitely cut back on the salt.
It was pretty gritty. I didn't mind, but G wasn't a fan. I could try sifting the flour to take the big pieces out, although the recipe didn't call for that.
It was pretty dry. Definitely caused by the bake.
